Ingredients
Rice & Grains
- 1 1/2 cup Rice sona masoori or basmati rice
- 1 cup Rolled Oats
Spices & Aromatics
- 1 tsp Mustard Seeds
- 3 Chili Pepper finely chopped, green
- 2 Chili Pepper adjust to your spice preference, red
- 5-6 Curry Leaves
- 1/2 tsp Chickpea split chickpeas
- 1/2 tsp Lentil black, split black lentils
- 8-10 Fenugreek Seeds methi seeds
- 1 Bay Leaf
- 1 Cinnamon small stick
- 1/2 tsp Coriander Seeds
- 1/4 tsp Cardamom Powder for enhanced aroma, optional
- 1/2 tsp Fenugreek Leaves dried
- 1 pinch Mace Powder
Vegetables & Aromatics
Dairy & Fats
- 3 tbsp Vegetable Oil
- 1 tbsp Clarified Butter
- 1 tbsp Yogurt curd
Other Ingredients
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Turmeric Powder
- 1 tsp Ginger Garlic Powder
- 5-6 Cashews roughly chopped
- 2 cup Water for cooking rice
Instructions
Prepare the Onion Masala
- Heat 2 tbsp oil in a pan. Add 1 tbsp oats and 2 red chilies. Sauté for a minute. Add mustard seeds, curry leaves, and sauté for another minute.
- Add chana dal, urad dal, fenugreek seeds, bay leaf, cinnamon stick, and coriander seeds. Sauté for 5 minutes.
- Add cardamom powder (optional), chopped onions, and green chilies. Stir until onions soften.
- Remove from heat and blend into a smooth paste once cooled.
Cook the Rice
- Rinse the rice thoroughly. In a pot, combine rice, oats, 2 cups of water, and salt. Bring to a boil, then reduce heat, cover, and simmer until the rice and oats are cooked through.
Final Assembly
- Heat 1 tbsp ghee and 1 tbsp oil in a pan. Add dried fenugreek leaves, mace powder, and half of the chopped onions. Sauté until fragrant.
- Add cashews and fry until golden brown. Add turmeric powder, ginger-garlic powder, and the onion masala paste. Mix well.
- Stir in yogurt and cook for a minute. Add the cooked rice and oats mixture; gently mix to combine.
- Add salt to taste. Serve hot.
