Prepare the Chicken Koftas

  • In a large bowl, combine the ground chicken, salt, cilantro, green chilies, onion, red chili powder, ground coriander, garam masala, and ginger-garlic paste.
  • Mix well to ensure the spices are evenly distributed throughout the chicken. Marinate for at least 30 minutes to allow the flavors to meld.
  • To make Nargisi Kofta, take a portion of the marinated chicken and flatten it in your palm. Place a peeled boiled egg in the center and gently shape the chicken around the egg, forming a smooth ball.
  • Repeat with the remaining chicken and eggs. Set the koftas aside.
  • Heat oil in a large skillet over medium heat. Gently place the koftas in the hot oil and fry for about 3 minutes per side, or until lightly browned and firm.
  • Remove the koftas from the skillet and set aside.

Prepare the Biryani Masala

  • In a bowl, combine the biryani masala, red chili powder, ginger-garlic paste, ground coriander, salt, caraway seeds, green cardamoms, bay leaf, turmeric powder, cumin seeds, and black peppercorns.
  • Add a little water to form a thick paste. Set aside.
  • In the same skillet used to fry the koftas, heat the oil over medium heat. Add the chopped tomatoes and sauté until softened.
  • Add the prepared biryani masala paste to the skillet and cook, stirring constantly, until fragrant and the oil starts to separate from the masala. This indicates the spices are cooked and will enhance the flavor of the biryani.
  • Add the fried onions and yogurt to the masala. Mix well.
  • Gently add the fried koftas to the masala, avoiding the use of a spoon to prevent them from breaking. Simmer until the koftas are cooked through, adding a little water at a time if needed.
  • Once the koftas are cooked, remove them from the skillet and set aside.

Prepare the Rice

  • Wash the basmati rice thoroughly under cold water until the water runs clear. This removes excess starch and helps achieve fluffy, separate grains.
  • Soak the rice in water for 20 minutes. Soaking helps the rice cook evenly and prevents it from becoming mushy.
  • In a separate pot, bring a large quantity of water to a boil. Add salt, green cardamoms, cinnamon sticks, cloves, and oil.
  • Drain the soaked rice and add it to the boiling water. Cook until the rice is about 3/4 done, or al dente. This parboiling method ensures the rice is cooked perfectly when layered with the masala and koftas.
  • Drain the rice and set aside.

Assemble and Finish the Biryani

  • In a large pot or Dutch oven, layer half of the parboiled rice. Top with half of the biryani masala and half of the koftas.
  • Repeat the layers with the remaining rice, masala, and koftas.
  • Drizzle oil over the top layer of rice. This helps create a beautiful crust on the top layer.
  • Soak saffron strands in a little warm water and drizzle this saffron water over the rice. This adds a vibrant color and a delicate aroma to the biryani.

  • Seal the pot tightly with a lid or aluminum foil. Place the pot on very low heat (dum) for 10 minutes, or bake in a preheated oven at 350°F (175°C) for 10 minutes. This allows the flavors to meld and the rice to steam to perfection.
  • Serve hot, garnished with additional cilantro and fried onions, if desired.
