Instructions

  • In a mixing bowl, combine the oats with enough water to just moisten them. Do not over-saturate. Set aside for 15 minutes to soften.
  • Heat the oil in a pan over medium heat. Add the asafoetida, mustard seeds, and cumin seeds. Once the seeds begin to pop, add the curry leaves, green chilies, and chopped onions.
  • Sauté the onions until translucent. Then, add the grated carrot, peas, and salt. Mix well and cook for 5-6 minutes, or until the vegetables are slightly softened.
  • Add the softened oats to the pan and stir gently to combine. Cook for another 3-4 minutes, allowing the oats to heat through and absorb the flavors.
  • Stir in the sugar and lemon juice. This adds a touch of sweetness and tanginess that balances the savory flavors.
  • Remove from heat and garnish with fresh coriander. Serve the Vegetable Oats Poha hot or warm and enjoy!

Recipe Notes

Good To Know

  • If using quick-cooking oats, sprinkle them lightly with water to moisten. They tend to become mushy easily.
  • If using thicker oats, soak them for a few minutes before cooking.
  • Add vegetables like cabbage, beans, or corn for extra nutrition.

Expert Tips

  • For a creamier texture, blend a portion of the cooked oats before adding them back to the pot.
  • Toast the oats in a dry pan before cooking for a nutty flavor.
  • Adjust the amount of liquid to achieve your desired consistency.

Storage Instructions

  • Store leftover oatmeal in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave, adding a splash of milk or water if needed.
