Ingredients
Noodles
- 8 oz Hakka Noodles dried, or your preferred type of noodle. choose a noodle that holds its shape well when stir-fried.
Vegetables
- 1 medium Bell Peppers capsicum, thinly sliced
- 1 medium Onion thinly sliced
- 1 cup Cabbage thinly sliced
- 1 cup Beans green, trimmed and chopped
- 1 medium Carrot cut into julienne strips
Sauce and Seasoning
- 2 tbsp Ginger-Garlic Paste
- 2 tbsp Tomato Puree
- 2 tbsp Tomato Ketchup Or Sauce use a good quality ketchup or tomato sauce for best flavor.
- 1/2 tsp Chili Powder or to taste. adjust to your spice preference., red
- 1 1/2 tsp Salt or to taste
- 1/4 tsp Pepper black, freshly ground, optional
- 2 tbsp Soy Sauce or to taste
- 1 tbsp Rice Vinegar adds a nice tang
- 3 tbsp Vegetable Oil
- 2 tbsp Water optional, to adjust sauce consistency
Instructions
Prepare the Noodles
- Boil the noodles according to package directions until al dente. Drain and rinse under cold water to prevent sticking. Set aside.
Sauté Aromatics
- Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Add the ginger-garlic paste and sauté for about 30 seconds until fragrant.
Stir-fry Vegetables
- Add the thinly sliced onions and carrots. Stir-fry for 1-2 minutes until slightly softened. Add the bell pepper, cabbage, and green beans. Stir-fry for another 2-3 minutes, ensuring the vegetables retain some crunch.
Create the Sauce
- Add the tomato puree, tomato ketchup, red chili powder, salt, black pepper, soy sauce, and rice vinegar to the wok. Stir-fry for 1-2 minutes, allowing the flavors to meld.
- Add 2 tablespoons of water to adjust the consistency if needed.
Combine and Toss
- Add the boiled noodles to the wok and toss everything together until the noodles are well coated with the sauce. Add a tablespoon of oil at the end to give the noodles a nice sheen.
