Ingredients
 

Vegetables

Spices & Herbs

  • 1/4 cup Coriander chopped, fresh
  • 2-3 Chilies adjust to taste, green, slit lengthwise

Other Ingredients

  • 1/4 cup Peanuts roasted and roughly chopped
  • 1.5 tsp Salt or to taste
  • 1 tbsp Sesame Seeds
  • 1/2 tsp Oil vegetable or coconut oil

Instructions
 

Prepare the Vegetables

  • Spiralize the carrots and onions using a spiralizer.

Prepare the Aromatics

  • Slit the green chilies lengthwise.
  • Finely chop the coriander.

Stir-Fry

  • Heat 1/2 teaspoon of oil in a pan or wok over medium heat.
  • Add the spiralized carrots and onions. Stir-fry for about 30 seconds.
  • Add the green chilies and coriander. Stir-fry for another 30 seconds.
  • Add salt and mix well.

Toast and Garnish

  • In a separate dry pan, toast the peanuts until fragrant and lightly browned.
  • Roughly chop the toasted peanuts.
  • Garnish the stir-fry with the chopped peanuts and sesame seeds.
  • Serve immediately and enjoy!
