Ingredients
 

Vegetables

  • 4 Carrot medium-sized, peeled and grated
  • 1/2 Onion finely chopped
  • 2 Chili green, slit lengthwise

  • 2 tbsp Coconut freshly grated, shredded
  • 2 tbsp Oil vegetable or coconut oil

Preparation

  • Peel and grate the carrots. Finely chop the onion and slit the green chilies lengthwise.

Tempering the Spices

  • Heat oil in a pan or kadai over medium heat. Add mustard seeds and split black gram. Wait until they begin to splutter and crackle.

Sautéing Aromatics

  • Add the chopped onions and green chilies to the pan. Sauté until the onions become translucent.

Cooking the Carrots

  • Add the grated carrots, turmeric powder, and salt. Stir-fry until the carrots soften slightly and turn a light yellow color.

Adding Coconut

  • Stir in the shredded coconut and cook for another minute or two, until the raw smell of the coconut disappears.

Serving

  • Serve the Carrot Poriyal hot with steamed rice or as a side dish with your favorite curry.
