- 1/4 tsp Mustard Seed rai
- 1/4 tsp Gram black, split, urad dal
- 1 sprig Curry Leaf
- 1/4 tsp Turmeric haldi
- 1.5 tsp Salt or to taste

Preparation
- Peel and grate the carrots. Finely chop the onion and slit the green chilies lengthwise.
Tempering the Spices
- Heat oil in a pan or kadai over medium heat. Add mustard seeds and split black gram. Wait until they begin to splutter and crackle.
Sautéing Aromatics
- Add the chopped onions and green chilies to the pan. Sauté until the onions become translucent.
Cooking the Carrots
- Add the grated carrots, turmeric powder, and salt. Stir-fry until the carrots soften slightly and turn a light yellow color.
Adding Coconut
- Stir in the shredded coconut and cook for another minute or two, until the raw smell of the coconut disappears.
