Ingredients
For the Chicken Marinade & Spice Blend:
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black
- 1 tsp Cumin
- 0.5 tsp Garlic Powder
For the Burrito Bowl:
- 1 large Chicken Breast
- 3 tbsp Olive Oil
- 1 medium Bell Peppers chopped, red
- 1 medium Bell Peppers chopped, yellow
- 1 medium Zucchini chopped
- 1 head Iceberg Lettuce or romaine lettuce
- 1 medium Onion roughly chopped
- 1 Chili finely chopped (optional), green
- 1 tbsp Mayonnaise
- 0.5 Lemon wedges for serving
- 5-6 leaves Mint Leaves for garnish
Instructions
Prepare the Chicken
- Mix salt, black pepper, cumin, and garlic powder in a bowl. Brush olive oil on the chicken breast and season generously with the spice mixture on both sides.
Grill the Chicken
- Heat olive oil in a grill pan over medium-high heat. Grill the chicken breast until cooked through, about 5-7 minutes per side. Remove from the pan and set aside to rest.
Grill the Vegetables
- In the same grill pan, add the chopped bell peppers and zucchini. Grill until softened, about 5-7 minutes, stirring occasionally.
Assemble the Burrito Bowl
- Place iceberg lettuce on a serving plate. Slice the rested chicken breast and arrange it on top of the lettuce.
Add the Vegetables and Toppings
