Ingredients
For the Paneer Tikka Marinade
- 200 gm Cottage Cheese indian cottage cheese, cubed
- 1 tbsp Dijon Mustard
- 1 tbsp Mayonnaise
- 1 tbsp Coriander chopped
- 1 tsp Chili Flakes red
- 1 tsp Sesame Seeds
- 1/2 tsp Pepper freshly ground, black
- 1 tbsp Honey
For the Grilled Watermelon
- 3 slices Watermelon about 1/2 inch thick
For the Pearl Millet Upma
- 1 cup Pearl Millet
- 1 medium Onion finely chopped
- 1 tbsp Vegetable Oil
- 1 tsp Cumin Seeds
- 1 tsp Ginger minced
- 4 clove Garlic minced
- 2 tbsp Tomatoes chopped
- 2 tbsp Corn boiled
- 1/2 cup Peas thawwed, frozen
- 2 tbsp Carrot chopped
- 2 tsp Lemon Zest
- 1 tbsp Lemon Juice
- 2 tsp Salt or to taste
- 1/2 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1 tsp Chaat Masala
- 2 cups Water for cooking the millet
- 1 tbsp Butter for grilling
Instructions
Prepare the Pearl Millet Upma
- Boil 2 cups of water with a pinch of salt. Add the pearl millet and cook according to package directions until tender. Set aside.
Sauté Vegetables for Upma
- Heat vegetable oil in a pan. Add cumin seeds, minced ginger, and garlic. Sauté until fragrant. Add chopped onion, tomatoes, boiled corn, thawed peas, and chopped carrots. Cook until vegetables are softened. Stir in lemon zest, lemon juice, turmeric powder, red chili powder, chaat masala, and salt. Mix well and combine with the cooked millet.
Prepare the Paneer Tikka
- In a bowl, combine mayonnaise, Dijon mustard, chopped coriander, red chili flakes, sesame seeds, and black pepper. Add the cubed paneer and marinate for at least 20 minutes.
Grill the Paneer and Watermelon
- Heat a grill pan or skillet with butter. Grill the marinated paneer cubes and watermelon slices until grill marks appear and they are slightly tender. Season the paneer with salt and pepper.
Assemble and Serve
- Drizzle honey on the grilled watermelon slices. Serve the grilled paneer and watermelon alongside the pearl millet upma. Optional: Drizzle some of the remaining marinade over the dish for extra flavor.
