- 1 cup Rice cooked long-grain white rice

- 1/2 cup Corn Kernels boiled or canned
- 1/2 cup Guacamole
- 1 cup Mozzarella Cheese shredded
- 1 Jalapeno Pepper adjust to taste), finely chopped (optional
- 2-3 tbsp Sauce adjust to taste, hot, or your preferred hot and sour sauce
For Assembly
- 5 Wheat Tortillas 10-inch diameter recommended, whole
- 2 tbsp Vegetable Oil for grilling
Instructions
Prepare the Filling
- Combine the cooked rice, mashed black beans, chopped vegetables (onion, bell pepper, tomato, jalapeno), corn, coriander, and hot sauce in a large bowl. Mix well.
Assemble the Burritos
- Lay out a tortilla. Add a generous portion of the filling mixture to the center of the tortilla, leaving about an inch of space around the edges.
- Top with a spoonful of guacamole and mozzarella cheese.
- Fold the sides of the tortilla inward, then tightly roll it up from the bottom, tucking in the filling as you go.
Grill the Burritos
- Heat the vegetable oil in a large skillet or griddle over medium heat.
- Carefully place the burrito seam-down in the hot skillet.
- Grill for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.
- Repeat with the remaining burritos.
