Ingredients
For the Roti Wrap
- 1 Roti approx. 8 inches, baida roti, or a similar large, soft flatbread. substitute with large flour tortillas if desired.
For the Filling
- 2 Egg poached
- 1.5 cups cup Chicken cooked, or butter chicken. can also be substituted with cooked and seasoned chickpeas for a vegetarian option., pulao, shredded or diced leftover chicken biryani
- 1 tbsp tbsp Butter
- 2 slices Cheddar Cheese
- 1.5 tsp Salt or to taste
- 1/2 tsp Italian Seasoning
- 1/4 cup Onion for added flavor, optional, pickled
For Serving
- 2 tbsp Butter for toasting the burrito
- Chilli Sauce or ketchup, to taste
Instructions
Prepare the Filling
- Shred the cooked chicken and toss it with 1/2 tsp of butter and Italian seasoning. Set aside.
- Poach the eggs until cooked through.
Assemble the Burrito
- Spread a thin layer of butter on the large roti.
- Add a layer of your chosen cooked rice (chicken biryani, pulao, or even just plain rice).
- Spread the seasoned chicken evenly over the rice.
- Top with the poached eggs and pickled onions (if using).
- Sprinkle with shredded cheddar cheese.
Roll and Toast
- Carefully roll the roti tightly into a burrito shape.
- Heat 2 tbsp of butter in a pan over medium heat.
- Place the burrito in the pan and cook, turning occasionally, until the roti is golden brown and crispy, and the cheese is melted.
Serve
- Cut the burrito in half and serve hot with chilli sauce or ketchup.
