Ingredients
 

For the Fig and Date Paste:

  • 20 large Figs dried
  • 15 Dates medjool or other soft dates, pitted
  • 0.25 cup Raisins

For the Nut Mixture:

  • 3 tbsp Ghee
  • 1 tbsp Ghee for greasing the tray

Prepare the Fig and Date Paste

  • Combine the dried figs, pitted dates, and raisins in a food processor. Process until a smooth paste forms. Transfer to a plate.

Toast the Nuts

  • Heat 2 tablespoons of clarified butter in a non-stick pan over medium heat. Add the chopped almonds, cashews, and pistachios. Sauté until lightly golden brown, stirring frequently to prevent burning. Remove from heat and set aside.

Combine and Cook

  • In the same pan, add the remaining 1 tablespoon of clarified butter. Add the fig and date paste and stir well to combine. Cook over low heat, stirring continuously, until the mixture becomes soft and shiny. This will take about 5-7 minutes.

Assemble and Set

  • Stir in the toasted nuts, ensuring they are evenly distributed throughout the mixture. Turn off the heat. Grease a small barfi tray or similar dish with ghee.

Chill and Serve

  • Pour the anjeer mixture into the greased tray and spread evenly. Refrigerate for at least 2 hours, or until firm. Cut into squares or barfi-shaped pieces and serve.
