Instructions

Prepare the Figs

  • Blanch the dried figs in boiling water for 10 minutes. Drain well and puree them in a food processor with 2 tablespoons of water until smooth.

Chop the Nuts

  • Finely chop the walnuts, almonds, and cashews.

Cook the Burfi

  • Heat the ghee in a non-stick pan over medium heat. Add the fig puree and cook for 1 minute, stirring constantly. Add the chopped nuts and sesame seeds (if using), mixing well to combine.

Add Spices and Sweetener

  • Stir in the cardamom powder and castor sugar (if using). Cook for another minute, or until the mixture slightly thickens.

Set and Cool

  • Line a shallow tray or baking dish with parchment paper. Pour the burfi mixture into the prepared tray and spread evenly with a spatula. Allow the burfi to cool completely at room temperature.

Cut and Serve

  • Once completely cool, cut the burfi into small, triangular pieces. Serve or refrigerate in an airtight container.

Recipe Notes

Expert Tips for the Perfect Burfi

  • For a richer flavor, toast the sesame seeds in a dry pan before adding them to the burfi mixture.
  • Adjust the amount of castor sugar according to your preference. You may find the natural sweetness of the figs sufficient.
  • If the burfi mixture is too thick, add a teaspoon of water at a time until you reach the desired consistency.
  • For easier cutting, chill the burfi in the refrigerator for at least 30 minutes before slicing.
