Ingredients
For the Anjeer Payasam
- 500 gm Milk cow's milk
- 2 Bay Leaves
- 1 tsp Jaggery
- 50 gm Cottage Cheese fresh indian cheese
- 1 tsp Rose Water
- 1 Tbsp Figs , anjeer, chopped
Instructions
- In a heavy-bottomed saucepan, combine the milk and bay leaves. Bring to a gentle simmer over medium heat.
- Reduce the heat to low and continue simmering until the milk has reduced to one-third of its original volume. This concentrates the milk's flavor and creates a richer payasam.
- Remove the saucepan from the heat and discard the bay leaves. Stir in the jaggery until it dissolves completely.
- Gently fold in the chenna (fresh Indian cheese). Be careful not to overmix, as this can make the chenna tough.
- Add the rose water and chopped figs. Stir to combine.
- Serve the Anjeer Payasam warm or chilled. Garnish with a few extra chopped figs, if desired.
