These delicious Amaranth, Fig, and Date Laddoos are a wholesome and naturally sweet treat, perfect for any occasion. Inspired by traditional recipes using amaranth grains, this recipe uses amaranth flour for a unique twist on classic laddoos. After a Navratri fast, I found myself with leftover amaranth flour and plenty of dried fruits, leading to this inventive and nutritious snack.
By skipping refined sugar and jaggery, and instead using the natural sweetness of dates and figs, these laddoos are packed with flavor and beneficial nutrients. They're a delightful way to use up festive pantry staples and create a guilt-free indulgence.
This recipe is easily adaptable – feel free to add your favorite nuts or seeds for extra texture and flavor!

Ingredients
 

Dry Ingredients

  • 2 cup Amaranth Flour rajgire ka atta
  • 1/2 cup Dates pitted and chopped
  • 1/2 cup Figs chopped, dried
  • 1/2 cup Raisins
  • 1/2 cup Nuts cashews, mixed, optional; chopped almonds, or walnuts

Wet Ingredients

  • 3 tbsp Ghee clarified butter; adjust to achieve desired consistency
  • 2-4 tbsp Water as needed to form a paste

Instructions
 

Roast the Amaranth Flour

  • Heat a heavy-bottomed pan or wok over medium heat. Add the ghee and let it melt completely. Add the amaranth flour and roast, stirring constantly, until it turns a few shades darker and a nutty aroma is released (about 8-10 minutes).

Prepare the Date and Fig Mixture

  • Remove the roasted amaranth flour from the pan and set aside. In the same pan, add the chopped dates, figs, and water. Cook over low heat, stirring occasionally, until a thick paste forms (about 5-7 minutes).

Combine and Mix

  • Add the roasted amaranth flour and raisins (and optional nuts) to the date and fig paste. Mix well until everything is thoroughly combined and a pliable dough forms. Add more water, a tablespoon at a time, if needed to achieve the right consistency.

Shape the Laddoos

  • Lightly grease your palms with ghee. Take small portions of the mixture and roll them into small balls (laddoos).

Cool and Store

  • Allow the laddoos to cool completely before storing them in an airtight container. They will keep for 2-3 weeks at room temperature.

Expert Tips for Perfect Laddoos

  • For a richer flavor, toast the nuts separately before adding them to the mixture.
  • If the mixture is too dry, add a teaspoon of water at a time until it reaches the desired consistency. If it's too wet, add a little more amaranth flour.
  • Use good quality ghee for the best flavor and aroma.
  • Let the laddoos cool completely before storing to prevent them from sticking together.
