Fruits & Vegetables

  • 1 large Carrot peeled and grated
  • 1/2 cup Dates medjool dates preferred, pitted and chopped
  • 3-4 Figs fresh or dried

Liquids & Sweetener

  • 1 cup Milk dairy or non-dairy milk of your choice
  • 1/4 cup Water for soaking and blending

Instructions
 

Preparation

  • Soak the pitted dates and figs in 1/4 cup of lukewarm water for 20 minutes to soften them.

Blending

  • Combine the soaked dates and figs with their soaking water in a high-speed blender.
  • Blend until completely smooth.
  • Add the grated carrot and milk to the blender.
  • Blend again until well combined and creamy.
  • Stir in chocolate syrup (or cocoa powder), if using, to your desired sweetness.

Serving

  • Drizzle chocolate syrup into the bottom of serving glasses (optional).
  • Pour the milkshake into the glasses.
  • Serve immediately, chilled, or over ice.

  1. IMO maple syrup would play off the other flavors much better than chocolate syrup would. I’d also swap the milk for full fat yogurt, more nourishing and satisfying. Ice cubes for added body and texture. A pinch of spice (a premixed spice blend like apple pie or pumpkin pie spice blend for convenience). and top prepared with walnuts for healthy fat and crunch. Which, I know, swapping milk for yogurt, it’s technically now a smoothie :.)5 stars
