Instructions

  • In a food processor, coarsely chop the dried figs and pitted dates. Set aside.
  • In the same food processor, coarsely chop the almonds and walnuts. Set aside.
  • Melt the butter in a large frying pan over medium heat.
  • Add the chopped dates and figs to the pan. Sauté for a few minutes, stirring constantly, until the mixture softens and becomes fragrant.
  • Stir in the honey. Continue to cook and stir until the mixture thickens and forms a lump, about 2-3 minutes. The honey acts as a binding agent and adds a touch of sweetness.

  • Line a baking tray or dish with parchment paper and lightly grease it with butter or cooking spray. This will prevent the bars from sticking.
  • Transfer the date and fig mixture to the prepared tray. Spread it evenly into a rectangular shape using a spatula or the back of a spoon.

  • Sprinkle the chopped nuts, pumpkin seeds, sesame seeds, couscous, and flax seeds evenly over the surface of the fruit mixture. Gently press them down so they adhere.
  • Let the bars sit at room temperature for 10 minutes to firm up slightly. Then, using a sharp knife, score the bars into the desired size and shape. This will make it easier to cut and separate them after they are chilled.
  • Refrigerate the bars for at least 2 hours, or until firm. Chilling helps the bars set completely and makes them easier to handle.
  • Once chilled, cut the bars along the scored lines. These No-Bake Date & Fig Energy Bars are a perfect guilt-free snack and are ideal for packing in kids' lunchboxes.
