Ingredients
 

For the Laddoos

  • 1 cup Sattu roasted chickpea flour; also known as health mix
  • 1/4 cup Cashews chopped
  • 1/4 cup Raisins optional
  • 2 tbsp Ghee clarified butter
  • 1 tsp Salt to taste
  • 1/2 tsp Cardamom Powder finely ground

For the Jaggery Syrup

  • 3/4 cup Jaggery powdered or grated; also known as vellam
  • 1 cup Water

Instructions
 

Prepare the Cashews and Raisins

  • Heat 1 tbsp of ghee in a wok or pan over medium heat. Add the chopped cashews and raisins and roast until lightly golden brown. Set aside.

Roast the Sattu

  • In the same wok, add the remaining 1 tbsp of ghee. Add the sattu and stir continuously over low heat until fragrant and the moisture evaporates. Be careful not to burn it.

Cool and Prepare Jaggery Syrup

  • Transfer the roasted sattu to a wide plate to cool. Meanwhile, prepare the jaggery syrup.

Make the Jaggery Syrup

  • In a saucepan, combine the water and jaggery. Bring to a boil, stirring until the jaggery dissolves completely. Simmer until the syrup thickens slightly. Remove from heat and strain through a fine-mesh sieve to remove any impurities.

Combine and Shape the Laddoos

  • Once the sattu has cooled slightly, add the roasted cashews and raisins, cardamom powder, and salt. Mix well. Gradually add the jaggery syrup, a little at a time, mixing until the mixture is just moist enough to form into balls. Do not add all the syrup at once.

Finish and Serve

  • Roll the mixture into small balls (laddoos). Gently coat each ladoo with a tiny bit of extra ghee for shine. Arrange the laddoos in a container or box. Let them cool completely before serving.

  • For a richer flavor, use high-quality desi ghee.
  • If the mixture is too dry, add a little more jaggery syrup; if it's too wet, add a little more sattu.
