- 1/2 cup Jowar Flour (sorghum)
- 1/4 cup Amaranth Flour
- 1 tsp Baking Powder
- 1 pinch Salt

- 1/3 cup Honey
- 15 Dates pitted and chopped
- 2 Large Eggs
- 1/4 cup Milk warm
- 1 tsp Vanilla Extract
- 1/4 cup Oil
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a baking dish.
- In a large bowl, whisk together the whole wheat flour, jowar flour, amaranth flour, baking powder, and salt. Sifting the dry ingredients helps create a light and airy cake.
- In a separate bowl, beat the eggs on high speed for about 5 minutes until light and fluffy. This incorporates air into the batter, resulting in a tender crumb.
- Add the honey, oil, and vanilla extract to the beaten eggs. Beat for another minute until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can make the cake tough.
- Add the warm milk and mix until the batter is smooth. The batter should be thick but pourable.
- Fold in the chopped dates.
- Pour the batter into the prepared baking dish and sprinkle a few extra chopped dates on top.
- Bake for 40 minutes, or until a wooden skewer inserted into the center comes out clean.
