Making the Batter

  • Combine oat flour and salt in a mixing bowl.
  • Slowly add buttermilk, stirring continuously until a smooth, pourable batter is formed. The consistency should be similar to pancake batter.

Cooking the Appams

  • Heat your appam pan or non-stick pan over medium heat. Lightly brush with oil.
  • Pour 1/4 cup of batter into the center of the hot pan, leaving some space around the edges.
  • Tilt the pan gently to spread the batter evenly, creating a thin, circular shape.
  • Cook for 2-3 minutes, or until the edges are set and the top is slightly dry.
  • Flip the appam and cook for another 1-2 minutes, or until lightly browned on the other side.
  • Repeat with the remaining batter.
