  • 1 cup Semolina also known as suji
  • 1.5 tsp Salt adjust to taste

Wet Ingredients

  • 1 cup Yogurt also known as curd. use plain yogurt for best results.
  • 1/4 cup Water add as needed to adjust batter consistency.

Aromatics & Spices

  • 2 tbsp Onion finely chopped
  • 1 Chili finely chopped; adjust quantity to your spice preference, green

Cooking Oil

  • 2 tbsp Oil for cooking. use a neutral oil with a high smoke point, like vegetable or canola oil.

Prepare the Batter

  • In a large mixing bowl, combine the semolina, yogurt, salt, chopped onion, and green chili. Mix thoroughly until well combined.
  • If the batter is too thick, gradually add 1/4 cup of water, mixing until you achieve a smooth, pourable consistency. Let the batter rest for at least 20 minutes to allow the semolina to absorb the liquid.

Cook the Appams

  • Heat an appam pan or a non-stick skillet over medium heat. Lightly grease each appam mold (or the skillet surface) with a few drops of oil.
  • Pour the batter into each mold, filling them about halfway full. Cover the pan and let the appams cook for approximately 3 minutes, or until the edges begin to set and the bottom is lightly golden brown.

Flip and Finish

  • Carefully flip the appams and cook for another 2-3 minutes on the other side, or until they are golden brown and cooked through. Ensure they are cooked evenly on both sides.
