Ingredients
Dry Ingredients
- ½ cup Whole Wheat Flour whole
- ½ cup Semolina
- 2 Tbsp Sesame Seeds
- 1 tsp Flax Seeds
- ½ tsp Cardamom Powder
- 1 pinch Salt
Wet Ingredients
- ½ cup Mango Puree
- 2 Tbsp Coconut grated
- 2 Tbsp Cream fresh
Instructions
- In a large bowl, combine the whole wheat flour, semolina, sesame seeds, flax seeds, cardamom powder, and salt.
- In a separate bowl, whisk together the mango puree, grated coconut, and fresh cream.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix. A few lumps are okay. Overmixing can lead to tough appams.
- Heat an appam pan or a non-stick skillet over medium heat. Lightly grease each cavity or the surface of the skillet with ghee or cooking spray. This will prevent sticking and promote even browning.
- Pour a spoonful of batter into each cavity or onto the skillet, spreading it slightly to form a thin circle. The batter should naturally spread to form the characteristic lacy edges.
- Cover the pan and cook for about 5-7 minutes, or until the edges are golden brown and the center is cooked through. Covering the pan traps steam and helps the appams cook evenly and become fluffy.
- Remove the appams from the pan and serve immediately. They are best enjoyed fresh and warm.
