Ingredients
Dough
- 2 cup All-Purpose Flour maida, plus extra for rolling
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 3/4 tsp Salt or to taste
- 4 tbsp Yogurt curd
- 2 tbsp Oil
- 2 tsp Sugar
- 1/4 cup Milk lukewarm
- 1/4 cup Water approximately
Aloo Filling
- 4 medium Potatoes boiled and cooled
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Chili Powder or to taste, red
- 1 tsp Mango Powder amchoor, dry
- 1 tsp Garam Masala
- 1 tsp Coriander dhania, ground
- 1 tsp Cumin Seeds jeera
- 1 tsp Chilies chopped, finely, green
- 1/2 cup Coriander dhania patti, chopped, finely
Topping & Assembly
- 1 tbsp Nigella Seeds kalonji
- Oil as needed, for greasing
- All-Purpose Flour maida, as needed, for dusting
- Butter for serving, to taste
Instructions
- In a large bowl, sift together the all-purpose flour, baking powder, baking soda, and salt at least twice. This ensures a light and airy dough.
- Make a well in the center of the dry ingredients. Add the oil, yogurt, sugar, lukewarm milk, and lukewarm water to the well.
- Begin mixing the wet and dry ingredients, gradually incorporating the flour. The dough will be sticky initially, but don't worry.
- Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until it becomes smooth and elastic. Adequate kneading develops the gluten, resulting in soft kulchas.
- Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place for about 2 hours, or until nearly doubled in size. In colder weather, this may take 3-4 hours or even overnight.
- While the dough is rising, prepare the aloo filling. Grate the boiled and cooled potatoes, ensuring there are no lumps.
- In a bowl, combine the grated potatoes, salt, red chili powder, dry mango powder, garam masala, ground coriander, cumin seeds, and chopped green chilies. Mix well.
- Add the chopped cilantro to the potato mixture and combine thoroughly. You can refrigerate the filling until ready to use.
- Once the dough has risen, punch it down gently to release the air. Knead briefly for about 30-40 seconds.
- Divide the dough into 15-16 equal portions and roll them into smooth balls. Cover the dough balls with a damp cloth and let them rest for 10-15 minutes. This allows the gluten to relax, making the kulchas easier to roll.
- Preheat your oven to 450°F (232°C).
- Take a dough ball, flatten it slightly, and place a spoonful of the potato filling in the center. Bring the edges of the dough together to enclose the filling completely, pinching to seal.
- Roll the filled dough ball gently into a slightly thick circle, about 5-6 inches in diameter. Use a little dry flour if the dough sticks to the rolling pin or surface.
- Sprinkle the top of each kulcha with nigella seeds and chopped cilantro. Gently press the toppings into the dough to ensure they adhere.
- Place the prepared kulchas on a baking sheet and bake for 12-15 minutes, or until they puff up and turn golden brown.
- Remove the kulchas from the oven and brush them with melted butter. Serve hot with yogurt or raita and pickle.
- Make Ahead: You can partially bake the kulchas until slightly puffed and lightly cooked. Let them cool completely on a wire rack, then wrap them tightly in cling film and store in the refrigerator for a few hours or up to a day. At the time of serving, brush with butter and toast on a heated griddle until golden brown and heated through.
