Ingredients
Coffee Decoction
- 3 tbsp Coffee Decoction ideally third decoction
Wet Ingredients
- 1 tbsp Milk
- 1 tbsp Ghee
- ½ tsp Apple Cider Vinegar
Dry Ingredients
- 2 tbsp Ragi Flour
- 1 tbsp Whole Wheat Flour whole
- 1 tbsp Cocoa Powder
- 2 tbsp Palm Sugar
- ¼ tsp Salt
- ¼ tsp Baking Soda
- ¼ tsp Baking Powder
Mix-ins
- 2 tbsp Chocolate Chips
Instructions
- Brew your filter coffee as usual, using 5 scoops of coffee grounds and less than ½ cup of boiling water. Repeat this process two more times to obtain the second and third decoctions. Set the third decoction aside for the mug cake.
- In a small bowl, combine 3 tablespoons of the third coffee decoction with 1 tablespoon of milk. Set this mixture aside.
- In a separate bowl, whisk together the ragi flour, whole wheat flour, palm sugar, salt, baking soda, and baking powder. This ensures even distribution of the leavening agents and prevents a lumpy cake.
- Add the ghee to the dry ingredients and mix until well combined. The ghee adds richness and moisture to the mug cake.
- Stir in the apple cider vinegar. The reaction between the vinegar and baking soda creates air bubbles, resulting in a light and fluffy texture.
- Pour the coffee and milk mixture into the dry ingredients and mix until just combined. Be careful not to overmix, as this can make the cake tough.
- Add 1 tablespoon of chocolate chips to the batter and fold them in gently.
- Pour the batter into a microwave-safe mug, filling it only ¾ full to prevent overflowing. Sprinkle the remaining chocolate chips on top.
- Microwave on high for 1 minute, or until the cake is cooked through and a toothpick inserted into the center comes out clean. The cooking time may vary depending on your microwave.
