    The sweetness of the banana with the bitter coffee is a heavenly combination. Banana coffee cake is a traditional simple cake you can whip up as soon as you think of it.

    Ingredients
      

    • Maida - 1 and 1/4 cup
    • Baking soda - 3/4 tsp
    • Baking powder - 3/4 tsp
    • Salt - 1/4 tsp
    • Sugar powdered - 1 cup
    • Butter - 1/3 cup + 2 tbsp oil
    • Eggs -2
    • Banana - 1 large ripe mashed
    • Vanilla essence - 1tsp
    • Coffee decoction - 2 tbsp
    • Powdered elaichi - 1 tsp

    Instructions
     

    • Sift the maida, baking powder, baking soda and salt together and keep aside.
    • Beat the sugar, butter and oil till fluffy.
    • Add eggs one by one and beat well for about 5-10 minutes. It should get mixed well and start forming air pockets.
    • Now add the banana, vanilla essence and powdered elaichi and mix.
    • Finally add the sifted flour mixture and mix completely without any lumps.
    • Grease a baking pan and dust with flour. Pour the cake mixture and bake in a preheated oven for 25 minutes at 180 degrees C. Reduce the temperature to 160 and bake for another 15 minutes.
    • Let the pan remain in the warm oven for another 10 minutes and then remove the cake on a wire rack to cool.
    • Cut into pieces and enjoy with a hot cup of coffee.

    Notes

    Powdered sugar gives better results than granulated sugar.
    The riper the banana, the better.
