Ingredients
For the Dough
- 1 cup All-Purpose Flour also known as maida, maida
- 1 tbsp Yogurt also known as curd or dahi, dahi
- 1 tbsp Vegetable Oil
- 1/2 tsp Salt or to taste
- 1/4 - 1/3 cup Water as needed, for kneading
For the Stuffing
- 1 cup Spring Onions finely chopped; separate white and green parts if desired
- 1 tbsp Vegetable Oil
- 1/4 tsp Salt or to taste
- 1 tbsp All-Purpose Flour also known as maida, maida
Instructions
Prepare the Dough
- In a mixing bowl, combine the all-purpose flour, salt, oil, and yogurt. Gradually add water, mixing until a soft, pliable dough forms. Knead for 2-3 minutes, then cover and let rest for at least 30 minutes.
Make the Green Onion Paste
- In a small bowl, whisk together the oil, salt, and all-purpose flour to create a thick paste.
Prepare the Filling
- Finely chop the spring onions.
Assemble the Pancakes
- Divide the dough into two equal portions. Roll out one portion into a thin, large circle. Spread the green onion paste evenly over the rolled dough. Sprinkle with the chopped spring onions.
Roll and Fold
- Starting from one end, tightly roll the dough into a log. Fold the log into a spiral, similar to a lacha paratha. Pinch the ends to seal. Gently flatten the spiral into a 6-inch pancake.
Cook the Pancakes
- Heat a lightly oiled griddle or large skillet over medium-low heat. Cook the pancake for 2-3 minutes per side, or until golden brown and crispy. Brush with oil while cooking for extra crispiness.
Serve
- Remove from heat and cut into wedges. Serve hot with your favorite dipping sauce (e.g., soy sauce, sweet chili sauce). Repeat with the remaining dough.
Recipe Notes
Expert Tips
