Ingredients
Produce
- 250 gm Spring Onions
- 2 large Potatoes
- 2-3 Chilies green
- 4 clove Garlic
Spices and Condiments
- Salt to taste
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 2 pinches Nigella Seeds kalonji
Oil
- 1 tbsp Oil
Instructions
- Wash and chop the spring onions, separating the white bulbs from the green leafy parts. Cut the potatoes into French fry-like sticks.
- Heat the oil in a pan over medium heat. Add the nigella seeds and garlic cloves. Sauté for 30 seconds until fragrant.
- Add the white parts of the spring onions to the pan. Sauté until softened, about 2 minutes. Then, add the potatoes. Sautéing the onions first builds a flavor base for the dish.
- Stir-fry the potatoes and onions for another minute, then add the green parts of the spring onions. This adds a pop of fresh flavor and vibrant color.
- Add the green chilies, salt, turmeric powder, and red chili powder. Stir well to combine.
- Reduce the heat to low, cover the pan, and let the potatoes cook until tender and slightly crispy, about 10-15 minutes. Check the potatoes for doneness with a fork.
- Serve this crunchy and flavorful Hare Pyaaz Aloo hot with paratha or roti. It's a delicious and satisfying dish that offers a unique twist on traditional vegetable sides.
