Making the Flaxseed Jowar Roti

  • Mix jowar flour, gram flour, flaxseed meal, and salt. Gradually add warm water to form a soft, smooth dough. Knead for 2-3 minutes and let it rest for 15 minutes.
  • Roll small portions of the dough into 6-7 cm diameter circles. Do not roll too thinly.
  • Cook the rotis on a hot griddle (tawa) over medium heat for 30 seconds per side, then cook directly over the flame for a few seconds on each side until lightly browned and cooked through.

Preparing the Spinach and Spring Onion Sabzi

  • Heat a tablespoon of oil (optional) in a pan over medium-low heat. Add cumin seeds and let them splutter.
  • Add finely chopped garlic and green chilies. Sauté for about a minute until fragrant.
  • Add roughly chopped spring onions, spinach, and tomatoes. Season with salt and mix well.
