Ingredients
For the Flaxseed Jowar Roti
- 0.75 cup Jowar Flour
- 0.25 cup Gram Flour besan
- 1 tbsp Flaxseed ground flaxseeds
- 1 cup Water as needed for dough consistency., warm water
- 1/2 tsp Salt to taste
For the Spinach and Spring Onion Sabzi
- 250 gm Spring Onion roughly chopped
- 100 gm Spinach roughly chopped
- 0.25 tbsp Garlic finely chopped
- 1-2 Chili finely chopped, green, to taste
- 2 tbsp Tomato finely chopped
- 1/2 tsp Salt to taste
- 1 tsp Cumin Seeds
- 1 tbsp Oil for sautéing, optional
For the Curd (Yogurt) Accompaniment
- 1 cup Yogurt
- 1/4 tsp Cumin Powder
- 1/4 tsp Salt to taste
- 1 tbsp Coriander finely chopped, optional
Instructions
Making the Flaxseed Jowar Roti
- Mix jowar flour, gram flour, flaxseed meal, and salt. Gradually add warm water to form a soft, smooth dough. Knead for 2-3 minutes and let it rest for 15 minutes.
- Roll small portions of the dough into 6-7 cm diameter circles. Do not roll too thinly.
- Cook the rotis on a hot griddle (tawa) over medium heat for 30 seconds per side, then cook directly over the flame for a few seconds on each side until lightly browned and cooked through.
Preparing the Spinach and Spring Onion Sabzi
- Heat a tablespoon of oil (optional) in a pan over medium-low heat. Add cumin seeds and let them splutter.
- Add finely chopped garlic and green chilies. Sauté for about a minute until fragrant.
- Add roughly chopped spring onions, spinach, and tomatoes. Season with salt and mix well.
- Cover the pan and cook for 10-15 minutes, or until the spinach is wilted and the vegetables are tender. Stir occasionally. Let excess liquid evaporate.
Making the Curd Accompaniment
- In a small bowl, whisk together yogurt, cumin powder, salt, and chopped cilantro or mint.
