- 3 tbsp Poppy Seeds posto

- 1-2 tbsp Water as needed for paste consistency

- Heat mustard oil in a kadai (wok) over medium heat. Add nigella seeds and let them splutter.
- Add the sliced onions, salt, sugar, and turmeric powder. Stir well to coat the onions.
- Cook the onions, stirring occasionally, until they are soft and caramelized, about 10-15 minutes.
Making the Poppy Seed Paste
- While the onions are cooking, prepare the poppy seed paste. Dry roast the poppy seeds in a pan until fragrant. Add the roasted poppy seeds, green chilies, and a little water to a blender or food processor. Blend until a smooth paste forms. Add more water if needed to achieve a creamy consistency.
Combining and Finishing
- Add the poppy seed paste to the cooked onions. Stir well to combine.
