Ingredients
Dough
- 2 cup Whole Wheat Flour whole
- 4 medium Onions chopped
- 6 Chilies finely chopped, green
- 1/2 cup Coriander chopped
- Salt to taste
- 1 tsp Chili Powder red
- Water as needed
Instructions
- In a large bowl, combine the whole wheat flour, chopped onions, green chilies, cilantro, salt, and red chili powder.
- Gradually add water while mixing the ingredients to form a soft, pliable dough. Knead the dough for a few minutes until smooth. This develops the gluten, resulting in a softer flatbread.
- Divide the dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin circle using a rolling pin.
- Heat a griddle or tawa over medium heat. Place a rolled-out paratha on the hot surface and cook for about a minute per side, or until small bubbles start to appear.
- Drizzle a little oil on the paratha and flip it over. Cook for another minute, then flip and drizzle oil on the other side. Continue cooking and flipping until both sides are golden brown and crispy.
- Serve the hot Pyaaz Koki immediately with your favorite chutney or yogurt.
Recipe Notes
Expert Tips
- For extra flavor, consider adding a pinch of asafoetida (hing) to the dough while kneading.
- Don't overfill the parathas to prevent them from tearing during cooking. A tablespoon or two of filling is usually sufficient.
- Cook the parathas on medium heat for even cooking and a crispy texture. Avoid high heat as it might burn them before cooking through.
Storage Instructions
- Store leftover parathas in an airtight container at room temperature for up to a day. For longer storage, refrigerate for up to 3 days. Reheat on a griddle or in a microwave before serving.
