Prepare the Chicken

  • Marinate the chicken with yogurt, ginger-garlic paste, salt, and optional turmeric powder. Set aside for at least 15 minutes.

Sauté Aromatics

  • Heat clarified butter and oil in a pressure cooker or large pot. Add bay leaf, star anise, cardamom, cinnamon, and cloves. Sauté until fragrant (about 30 seconds).

Cook the Onions

  • Add the chopped onion and cook until golden brown, stirring occasionally.

Brown the Chicken

  • Add the marinated chicken and cook until lightly browned.

Add Rice and Spices

  • Stir in the rinsed basmati rice and green chilies. Cook for 2-3 minutes, stirring constantly, until the raw smell of the rice is gone.

Simmer and Pressure Cook

  • Pour in the water and remaining yogurt. Add salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 5 minutes.

Pressure Cook (Optional)

  • If using a pressure cooker, close the lid and cook for 2 whistles. Allow the pressure to release naturally.

Fluff and Serve

  • Once the pressure is released, fluff the rice with a fork. Serve hot with your favorite side dishes, such as raita or a simple salad.

Expert Tips for the Perfect Chicken Pulav

  • For extra flavor, toast the spices lightly in a dry pan before adding oil. This will enhance their aroma.
  • Don't overcook the rice! Slightly undercooked rice will continue to cook in the residual heat, resulting in perfectly fluffy grains.
  • Adjust the amount of water based on your rice and preferred consistency. If you prefer a drier pulao, use slightly less water.
  • Experiment with other vegetables! Peas, carrots, and potatoes are all delicious additions to this recipe.
