Ingredients
Aromatics & Spices
- 2 clove Cloves
- 1 inch Cinnamon Stick cinamon
- 2 Cardamom Pods elaichi, green cardamom preferred
- 1/2 tsp Cumin Seeds
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Garam Masala
- 1/4 tsp Turmeric Powder haldi
Vegetables & Rice
- 1 medium Onion finely chopped
- 1 Chili adjust to taste, chopped, green
- 1 medium Beetroot finely chopped
- 1/2 cup Peas fresh or frozen, green
- 1 cup Basmati Rice washed and soaked for 15 minutes
Liquids & Fats
- 1.75 cup Water adjust as needed for desired consistency
- 1 tbsp Vegetable Oil
- 1 tbsp Ghee clarified butter, optional
Instructions
Preparing the Aromatics
- Heat vegetable oil and ghee in a pressure cooker over medium heat. Add cinnamon, cloves, cardamom pods, and cumin seeds. Let them splutter for about 30 seconds until fragrant.
Sautéing Vegetables and Spices
- Add the ginger-garlic paste, finely chopped onion, and green chili. Sauté for 2-3 minutes until the onions soften and the raw smell disappears.
Adding Spices and Beetroot
- Stir in garam masala and turmeric powder. Sauté for another minute until fragrant.
- Add the chopped beetroot and green peas. Sauté for 2-3 minutes until slightly softened.
Incorporating Rice
- Add the soaked basmati rice and salt. Stir well to coat the rice evenly with the spices and vegetables.
Cooking the Pulav
- Pour in the water, ensuring it's enough to cover the rice by about an inch. Close the lid and pressure cook for 2 whistles. Once the pressure releases naturally, open the lid.
Finishing and Serving
