Ingredients
 

Grains & Legumes

  • 1/2 cup Barley oo mugi; rinse thoroughly
  • 1/2 cup Mung Bean split yellow lentils; rinse thoroughly, yellow

Vegetables

  • 1 Potato medium, peeled and sliced
  • 1 Tomato finely chopped, medium
  • 2 Chili finely chopped; adjust to taste, green

Spices & Aromatics

Fats & Liquids

  • 2 tbsp Oil vegetable or coconut oil
  • 1 tbsp Butter optional
  • 2 cup Water or as needed for desired consistency

Seasoning

  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Barley

  • Dry roast the barley for 2 minutes in a pan until lightly fragrant.

Cook the Dal and Potatoes

  • In a pressure cooker, combine the moong dal, sliced potatoes, and 2 cups of water. Cook for 2 whistles or until the dal is tender.

Sauté Aromatics

  • Heat oil in a pan. Add the bay leaf and dry red chilies; sauté for a few seconds until fragrant.

Add Tomatoes and Spices

  • Add the chopped tomatoes and sauté for 1 minute until slightly softened. Then add the cumin seeds, coriander seeds, and minced ginger; cook for 2 minutes, stirring frequently.

Combine and Simmer

  • Add the cooked moong dal and potatoes to the pan. Add a little water to adjust the consistency, cook for another 5 minutes. Stir in turmeric powder and green chilies. Season with salt.

Finish the Khichdi

  • Add the roasted barley to the pan. Cook for 5 minutes on low heat, stirring occasionally to ensure even cooking and desired consistency. Stir in butter (if using). Sprinkle garam masala on top.

Serve

  • Serve the Oo Mugi & Moong Dal Khichdi hot.
