For the Spice Paste

For the Stir-Fry

  • 400 grams Mushrooms button, cremini, or shiitake; peeled and sliced
  • 1 Onion medium-sized, thinly sliced
  • 3 tbsp Bell Peppers finely chopped (any color)
  • 3 tbsp Spring Onions finely chopped, white and green parts separated
  • 2 tbsp Vegetable Oil
  • 1 tbsp Corn Flour for thickening the sauce, optional
  • 2 tbsp Water for thinning the sauce if needed

Instructions
 

Prepare the Spice Paste

  • Grind dried red chilies, garlic, salt, sugar, and lemon juice into a smooth paste using a mortar and pestle or a food processor.

Stir-fry the Vegetables

  • Heat vegetable oil in a wok or large skillet over medium heat. Add the sliced onion and bell pepper; stir-fry for about 5 minutes until softened.

Cook the Mushrooms

  • Add the sliced mushrooms and stir-fry for 2 minutes until slightly tender.

Add the Spice Paste

  • Stir in the prepared spice paste and cook for 1 minute, allowing the flavors to meld.

Thicken the Sauce (Optional)

  • In a small bowl, whisk together cornstarch and water to form a slurry. If the sauce is too thin, slowly drizzle the slurry into the wok while stirring constantly until the sauce reaches your desired thickness.

Finish and Serve

  • Stir in the white parts of the spring onions. Remove from heat and garnish with the green parts of the spring onions. Serve hot as an appetizer or side dish.
