Ingredients

- 15 Chilies dried, red
- 7 clove Garlic
- 1.5 tsp Salt or to taste
- 1 tsp Sugar
- 1 tbsp Lemon Juice
For the Stir-Fry
- 400 grams Mushrooms button, cremini, or shiitake; peeled and sliced
- 1 Onion medium-sized, thinly sliced
- 3 tbsp Bell Peppers finely chopped (any color)
- 3 tbsp Spring Onions finely chopped, white and green parts separated
- 2 tbsp Vegetable Oil
- 1 tbsp Corn Flour for thickening the sauce, optional
- 2 tbsp Water for thinning the sauce if needed
Instructions
Prepare the Spice Paste
- Grind dried red chilies, garlic, salt, sugar, and lemon juice into a smooth paste using a mortar and pestle or a food processor.
Stir-fry the Vegetables
- Heat vegetable oil in a wok or large skillet over medium heat. Add the sliced onion and bell pepper; stir-fry for about 5 minutes until softened.
Cook the Mushrooms
- Add the sliced mushrooms and stir-fry for 2 minutes until slightly tender.
Add the Spice Paste
- Stir in the prepared spice paste and cook for 1 minute, allowing the flavors to meld.
Thicken the Sauce (Optional)
