Arbi is a family of root vegetables. Leaves also eatable. Arbi has lot of nutrients which includes magnesium, iron, fibres, potassium, manganese, zinc, copper and phosphorus. It has a good power of antioxidant. I made the recipe with dill (Soya) leaves.

Ingredients
- 250 gm boiled arbi
- 100 gm chopped Soya leaves
- 1 teaspoon carrom seeds
- 1 teaspoon Turmeric Powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 tbsp tomato puree
- 2 tbsp mustard oil
- 1/4 teaspoon asafoetida
- Salt

Instructions
- Wash the Soya leaves then chopped.
- Wash the arbi then bring to boil and peel off the skins.
- Heat a pan add oil, after smoking add carom seeds, asafoetida, turmeric powder, coriander powder, chili powder, tomato puree.
- Stir fry, add chopped leaves close the lid for a minute.
- Open the lid add boiled arbi and salt, mix all together again close the lid for a minute.
- Open the lid again stir fry. Now put off the burner. Garnish with Soya leaves. Now it is ready to serve.
Notes
This recipe can be served as a snack or main courses.
