Ingredients
For the Chicken Marinade
- 400 gm Chicken boneless, cut into 1 1/2 inch pieces
- 1 tbsp Lemon Juice
- 1 tsp Kashmiri Chili Powder
- Salt to taste
- 1/2 cup Yogurt greek yogurt recommended for lower lactose
- 2 tsp Ginger Paste
- 2 tsp Garlic Paste
- 1/2 tsp Kashmiri Chili Powder
- 1/2 tsp Garam Masala
- Salt to taste
- 2 tsp Mustard Oil
For the Makhani Gravy
- 2 tbsp Butter
- 2 Cardamom Pods
- 2 Cloves
- 2-3 Peppercorns black
- 1 inch Cinnamon Stick
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1/2 cup Tomato Puree
- 1/2 tsp Chili Powder red
- Salt to taste
- 2 tbsp Sugar Substitute stevia or erythritol recommended
- 1/2 tsp Dried Fenugreek Leaf dried fenugreek leaves
- 1/2 cup Heavy Cream use sparingly for diabetic-friendliness
- 2 tbsp Butter for basting chicken
Instructions
Prepare the Chicken Marinade
- Marinate the chicken pieces with Kashmiri chili powder, lemon juice, and salt. Refrigerate for at least 30 minutes.
Marinate the Chicken
- In a bowl, combine yogurt, ginger paste, garlic paste, Kashmiri chili powder, garam masala, salt, and mustard oil. Mix well.
- Apply this marinade to the chicken and refrigerate for 3-4 hours, or preferably overnight.
Cook the Chicken
- Preheat oven to 400°F (200°C). Thread the marinated chicken onto skewers. Bake for 10-12 minutes, or until nearly cooked through.
- Baste with 2 tbsp of butter and cook for another 2 minutes. Remove from oven and set aside.
Make the Makhani Gravy
- Heat butter in a pan. Add cardamom pods, cloves, peppercorns, and cinnamon stick. Sauté for 2 minutes.
- Add ginger and garlic paste; sauté for another 2 minutes. Stir in tomato puree, red chili powder, salt, and 1/2 cup water.
- Bring to a boil, reduce heat, and simmer for 10 minutes. Add sugar substitute and kasuri methi.
Combine and Serve
- Add the cooked chicken to the gravy. Simmer for 5 minutes. Stir in heavy cream and heat through. Serve hot with whole-wheat naan or paratha.
