Prepare the Chicken Marinade

  • Marinate the chicken pieces with Kashmiri chili powder, lemon juice, and salt. Refrigerate for at least 30 minutes.

Marinate the Chicken

  • In a bowl, combine yogurt, ginger paste, garlic paste, Kashmiri chili powder, garam masala, salt, and mustard oil. Mix well.
  • Apply this marinade to the chicken and refrigerate for 3-4 hours, or preferably overnight.

Cook the Chicken

  • Preheat oven to 400°F (200°C). Thread the marinated chicken onto skewers. Bake for 10-12 minutes, or until nearly cooked through.
  • Baste with 2 tbsp of butter and cook for another 2 minutes. Remove from oven and set aside.

Make the Makhani Gravy

  • Heat butter in a pan. Add cardamom pods, cloves, peppercorns, and cinnamon stick. Sauté for 2 minutes.
  • Add ginger and garlic paste; sauté for another 2 minutes. Stir in tomato puree, red chili powder, salt, and 1/2 cup water.
  • Bring to a boil, reduce heat, and simmer for 10 minutes. Add sugar substitute and kasuri methi.

Combine and Serve

  • Add the cooked chicken to the gravy. Simmer for 5 minutes. Stir in heavy cream and heat through. Serve hot with whole-wheat naan or paratha.
