Ingredients
Produce
- 2 Bell Peppers large
- 1 Tbsp Chilies chopped, green
- 1 Tbsp Carom Leaves chopped
Pantry
- 150 gm Indian Chestnuts
- 1 tsp Fennel Seeds
- 1 tsp Ginger-Garlic Paste
- 1 Tbsp Onion Paste
- 1 Tbsp Coconut Paste
- 1 Tbsp Tomato Paste
- 1 Tbsp Raisin And Nut Paste
- 1 Tbsp Cumin Seeds roasted and ground
- 1 Tbsp Mustard Oil
- Salt to taste
Instructions
- Wash and peel the Indian chestnuts. Grate them into a paste.
- Cut the bell peppers in half lengthwise. Remove the seeds and membranes.
- Heat the mustard oil in a pan over medium heat. Add the fennel seeds and sauté for a few seconds until fragrant.
- Add the chestnut paste, chopped green chilies, onion paste, coconut paste, chopped carom leaves, tomato paste, and raisin and nut paste to the pan. Sauté for a few minutes until the mixture is fragrant and the flavors meld.
- Season the mixture with salt and ground roasted cumin seeds. This adds depth and warmth to the filling.
- Carefully fill each bell pepper half with the chestnut mixture.
- Heat a little oil in a pan over medium heat. Place the stuffed bell peppers in the pan and bake, turning occasionally, until the peppers are tender and slightly charred. This allows the peppers to soften and the filling to heat through evenly.
- For an extra touch of richness, drizzle with coconut cream or coconut milk before serving.
