Ingredients
Dry Ingredients
- 1 cup Sesame Seeds white
- 1 cup Rice flattened rice, also known as poha or beaten rice
- 1/2 cup Coconut Sugar
Other Ingredients
- 1 tbsp Clarified Butter ghee, can substitute with unsalted butter
Instructions
Prepare the Ingredients
- Dry roast the sesame seeds in a pan over low heat for 2-3 minutes, stirring constantly, until fragrant. Be careful not to burn them.
- Dry roast the flattened rice (poha) in the same pan for 2-3 minutes, stirring constantly, until lightly toasted. Be careful not to burn it.
- Remove both from heat and let them cool completely.
Combine and Shape
- In a large bowl, combine the cooled sesame seeds, flattened rice, and coconut sugar. Mix well.
- Add the desi ghee and mix thoroughly until all ingredients are well combined and the mixture is slightly moist.
- With your hands, form small balls (approx 1-inch diameter) from the mixture.
Serve and Store
- Serve the laddus immediately or store them in an airtight container at room temperature for up to a week.

Expert Tips
- For a finer texture, you can lightly pulse the roasted sesame seeds and poha in a food processor before mixing with other ingredients. Don't over-process, or it will turn into a paste.
- Adjust the amount of coconut sugar to your liking, depending on the sweetness preference and the type of coconut sugar used. Some are sweeter than others.
- If the mixture is too dry to form balls, add a teaspoon of ghee or a few drops of water at a time until it reaches the desired consistency.
- For a richer flavor, you can toast the coconut sugar lightly before adding it to the mixture (be extremely careful not to burn it!).
