Prepare the Rice

  • Wash the basmati rice thoroughly and soak in water for 5-10 minutes. Drain well and set aside.

Prepare the Spice Paste

  • Finely chop the onion. Crush the ginger, garlic, and green chilies into a paste (or finely mince).

Sauté the Aromatics

  • Heat olive oil in a pressure cooker. Add the whole cloves and cinnamon stick; sauté until fragrant (about 30 seconds).

Add Spices and Vegetables

  • Add the ginger-garlic-chili paste and sauté until lightly browned. Add the chopped onions and sauté until golden brown. Stir in the green peas and cook for 5 minutes.

Add Prawns and Rice

  • Add the shrimp/prawns and sauté until pink and cooked through (about 3-5 minutes). Stir in the drained rice and sauté for 1-2 minutes.

Cook the Pulao

  • Pour in 4.5 cups of water and add lemon juice and salt to taste. Stir well. Close the lid and pressure cook for 2 whistles. Allow the pressure to release naturally.

Serve

  • Fluff the rice with a fork. Serve the prawn and green pea pulao hot, garnished as desired. It pairs well with tomato sauce or egg Manchurian (as suggested in the original recipe).
