Ingredients
 

For the Filling

  • 1 cup Peas fresh or frozen, green, mashed, shelled
  • 1/2 cup Potato boiled and mashed
  • 1 tbsp Cumin Seeds roasted and ground
  • 1 tbsp Coriander roasted and ground
  • 1 tbsp Pepper black, crushed
  • 1/4 tsp Asafoetida hing
  • 1.5 tsp Salt or to taste
  • 1 tbsp Oil for sautéing the filling

Prepare the Filling

  • Heat 1 tbsp oil in a pan. Add asafoetida, cumin powder, and coriander powder. Sauté for 30 seconds until fragrant. Add mashed green peas and potatoes. Mix well. Add salt and black pepper. Cook for 2-3 minutes until heated through. Remove from heat and set aside to cool.

Prepare the Dough

  • In a large bowl, combine wheat flour and 1 tsp oil. Gradually add water and knead into a smooth, soft dough. Cover and let it rest for at least 15 minutes.

Assemble and Fry the Kachoris

  • Divide the dough into small balls. Roll each ball into a thin circle. Place a spoonful of the pea filling in the center. Bring the edges together to form a half-moon shape, pinching to seal. Gently flatten the kachori with your hand or a rolling pin.
  • Heat oil for deep frying in a large pan or kadai. Once hot, carefully place the kachoris in the oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy on both sides. Remove and drain on a paper towel-lined plate.

  • Serve hot with your favorite chutney or yogurt.
