Prepare the Papaya

  • Grate the raw papaya finely.

Cook the Mixture

  • Heat a wide pan or wok over medium heat. Add the grated papaya and cook for 3-4 minutes, stirring occasionally, until slightly softened.
  • Add the grated fresh coconut to the pan and mix well with the papaya. Continue stirring for another 2-3 minutes.
  • Add the granulated sugar and cardamom powder (if using). Stir continuously until the sugar dissolves completely and the mixture starts to come together. This will take about 5-7 minutes.
  • Continue cooking, stirring frequently, until most of the moisture evaporates and the mixture becomes thick and easily forms a ball when squeezed.

Shape the Ladoos

  • Remove the pan from the heat and allow the mixture to cool slightly, about 10-15 minutes. The mixture should still be warm but not hot.
  • Grease your hands slightly with oil or ghee to prevent sticking. Roll the mixture into small, round ladoos.
  • Spread the desiccated coconut on a plate. Roll each ladoo in the desiccated coconut to coat evenly.
