Instructions

Prepare the Coconut Mixture

  • Combine desiccated coconut, milk, and sugar in a heavy-bottomed pan. Mix well and let it sit for 15 minutes to allow the coconut to absorb the milk.

Cook the Mixture

  • Place the pan over medium heat. Stir frequently to prevent sticking and burning. The mixture will become gooey as the sugar melts.

Evaporate Moisture

  • Continue cooking, stirring constantly, until the mixture thickens considerably and most of the moisture has evaporated. The mixture should be firm enough to hold its shape when rolled into balls – it shouldn't be soggy.

Add Spices and Cool

  • Remove from heat and stir in the cardamom powder. Let the mixture cool completely to room temperature. This is crucial for easy rolling.

Shape the Ladoos

  • Lightly grease your hands with ghee. Take small portions of the mixture (approximately 1-1.5 tablespoons) and roll them into balls.

Coat and Garnish

  • Roll each ladoos in desiccated coconut to coat. Garnish with sliced almonds.

Store and Serve

  • Store your coconut ladoos in an airtight container in the refrigerator. They will keep for 5-7 days.

Recipe Notes

Expert Tips for Perfect Coconut Ladoos

  • Use good quality desiccated coconut for the best flavor and texture.
  • Don't rush the cooking process; ensure the mixture is fully cooked to prevent sogginess.
  • If the mixture is too dry, add a teaspoon of milk at a time until it's pliable enough to roll.
  • For a richer flavor, toast the desiccated coconut in a dry pan before adding it to the mixture.
