Ingredients
Chocolate Mixture
- 2 Tbsp Cocoa Powder
- 2 Tbsp Sugar granulated
- 1 1/2 Tbsp Corn Flour
- 1/2 cup Chocolate chopped, milk or dark chocolate
- 1 1/2 cup Milk
Instructions
- In a saucepan, whisk together the cocoa powder, granulated sugar, cornstarch, and chopped chocolate.
- Gradually whisk in half of the milk until smooth. This helps prevent lumps from forming.
- Add the remaining milk and whisk until the mixture is completely combined.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture comes to a simmer and thickens slightly. This will take about 3-5 minutes. Stirring constantly prevents the chocolate from scorching on the bottom of the pan.
- Remove the saucepan from the heat and let the mixture cool for 10-15 minutes.
- Pour the cooled chocolate mixture into popsicle molds.
- Freeze for at least 6 hours, or preferably overnight, until solid.
- Enjoy your delicious homemade Chocolate Fudge Popsicles!
Recipe Notes
Good To Know
- For an extra indulgent touch, dip the popsicles halfway in melted white or dark chocolate once frozen, then sprinkle with freeze-dried raspberries or heart-shaped sprinkles.
- If you prefer a dairy-free version, substitute the milk with coconut milk or almond milk. Coconut milk will give a richer, creamier texture and a subtle tropical flavor that pairs well with chocolate.
- To achieve an ultra-smooth and creamy texture, strain the chocolate mixture through a fine mesh sieve before pouring into molds, which removes any tiny lumps from the cocoa powder or corn flour.
- For a surprise inside, press a few chopped chocolate chunks, mini marshmallows, or fresh berries into the molds after pouring in the mixture but before fully freezing.
Expert Tips
- For intensely flavored popsicles, use high-quality chocolate with a high cocoa content.
- To easily remove the popsicles from the molds, run them under warm water for a few seconds.
- Get creative with your toppings! Chopped nuts, shredded coconut, or a drizzle of caramel sauce are all delicious options.
Storage Instructions
- Store the popsicles in an airtight container or freezer bag in the freezer for up to 2 months.
