Ingredients
For the White Chocolate Mousse
- 6 oz Chocolate high-quality white chocolate is recommended for best results., white
- 1/2 cup Heavy Whipping Cream
- 2 Large Egg Whites room temperature for best volume.
- 2 tbsp Sugar also known as icing sugar., powdered
For the Dark Chocolate Mousse
- 6 oz Chocolate use a high-quality dark chocolate with a minimum of 70% cacao for a rich, dark, intense flavor.
- 1/2 cup Heavy Whipping Cream
- 2 Large Egg Whites room temperature for best volume.
- 2 tbsp Sugar also known as icing sugar., powdered
For Garnish
- 1 oz Chocolate for shavings., dark
Instructions
Prepare the White Chocolate Mousse
- Melt the white chocolate using a double boiler or microwave in short bursts, stirring until smooth. Set aside to cool slightly.
- Whip the heavy cream until soft peaks form. In a separate bowl, beat the egg whites with powdered sugar until stiff, glossy peaks form.
- Gently fold the melted white chocolate into the whipped cream. Then, carefully fold in the egg whites in three additions, ensuring not to deflate the mixture.
Prepare the Dark Chocolate Mousse
- Melt the dark chocolate using a double boiler or microwave in short bursts, stirring until smooth. Set aside to cool slightly.
- Whip the heavy cream until soft peaks form. In a separate bowl, beat the egg whites with powdered sugar until stiff, glossy peaks form.
- Gently fold the melted dark chocolate into the whipped cream. Then, carefully fold in the egg whites in three additions, ensuring not to deflate the mixture.
Assemble the Mousse
- Fill two separate piping bags with the white and dark chocolate mousses.
- In individual serving glasses or dessert cups, pipe a layer of dark chocolate mousse.
- Pipe a layer of white chocolate mousse on top of the dark chocolate layer.
- Pipe another layer of dark chocolate mousse on top.
