Ingredients
Chocolate Sponge Cake

Whipped Cream Filling
- 150 ml Heavy Whipping Cream
Chocolate Ganache
- 100 gm Chocolate dark, finely chopped
- 50 gm Heavy Cream
- 1 tsp Butter unsalted
Instructions
Make the Chocolate Sponge Cake
- Preheat oven to 356°F (180°C). Line an 11x9 inch baking pan with parchment paper, leaving an overhang on the sides. Grease the parchment paper.
- In a large bowl, whisk the eggs until light and frothy. This incorporates air for a fluffy cake.
- Add the granulated sugar, oil, and vanilla extract to the eggs. Whisk until the sugar dissolves and the mixture is well combined.
Combine Dry Ingredients
- In a separate bowl, sift together the all-purpose flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix.
- If the batter is too thick, add milk 1 tablespoon at a time until it reaches a smooth, pourable consistency.
- Pour the batter into the prepared pan and spread evenly with a spatula.
Bake and Roll the Cake

- Reroll the cake tightly. Spread the chocolate ganache over the entire surface of the rolled cake.
- Refrigerate for at least 15 minutes to allow the ganache to set.
