Kids will love these tasty soya cutlets, a fantastic teatime snack or light brunch. The combination of soya chunks, potatoes, paneer (cottage cheese), and fresh herbs creates a wholesome and flavourful experience. Enjoy these guilt-free patties anytime!

Prepare the Potatoes and Soya Chunks

  • Boil or pressure cook 1 medium potato until tender. Cool slightly, peel, and mash coarsely. Soak 100g soya chunks in hot water for 10 minutes, then squeeze out excess water and roughly chop.

Prepare the Aromatics

  • Finely chop 1/2 cup coriander leaves and 2 green chilies.

Combine the Ingredients

  • In a bowl, combine the mashed potato, chopped soya chunks, coriander, chilies, 50g crumbled paneer, 1/2 tsp garam masala, and 1.5 tsp salt. Mix well.

Add Dry Ingredients

  • Add 1 tbsp rice flour and 2 tbsp all-purpose flour (maida) to the mixture. Combine thoroughly with your hands until a cohesive dough forms.

Shape and Coat the Tikkis

  • Roll the mixture into small balls, then flatten them into patties. Lightly beat 2 eggs in a shallow dish and spread breadcrumbs in another. Dip each patty in the egg, then coat with breadcrumbs.

Fry the Tikkis

  • Heat oil in a pan over medium heat. Carefully fry the coated tikkis until golden brown and crispy on both sides. Remove and drain on paper towels.

Serve

  • Serve hot with your favourite dipping sauce, such as mayonnaise or tomato ketchup.

Recipe Notes

Expert Tips for Perfect Soya Tikkis

  • For extra flavour, sauté the chopped green chilies and coriander in a little oil before adding them to the mixture.
  • Don't over-blend the soya chunks; a few pulses are enough to break them down slightly for a better texture.
  • If the mixture is too wet, add a little more rice flour or all-purpose flour to achieve the desired consistency.
  • For a healthier option, you can shallow fry the tikkis instead of deep frying.
