Instructions
Preparation
- Soak the chana dal and soya granules in separate bowls of water for at least 1 hour, or until softened.
Cooking the Dal and Soya
- Drain the soaked chana dal and soya granules. In a pressure cooker, combine the drained chana dal and soya granules with 2 cups of water. Add the chopped onion, green chilies, ginger-garlic paste, garam masala, red chili powder, and salt. Cook for 3 whistles, then simmer for 10 minutes.
Making the Tikki Mixture
- Carefully release the steam from the pressure cooker. Remove the cooked mixture and allow it to cool slightly. If there's excess water, fry the mixture in a pan until most of the moisture is evaporated.
- Once cool enough to handle, use a hand blender or food processor to grind the mixture into a coarse paste. Add the chopped coriander and mint, and breadcrumbs. Mix thoroughly to combine.
Shaping and Frying the Tikkis
- Shape the mixture into small, flat patties (tikkis).
- Heat oil in a shallow pan over medium heat. Carefully place the tikkis in the hot oil and shallow fry until golden brown and crisp on both sides.
Serving
- Serve the hot soya tikkis with your choice of chutney or tomato ketchup.
