- Heat a tawa or flat griddle over medium heat.
- Divide the dough into 2-3 equal portions. Lightly flatten each portion into a thick disc.
- Cook the discs on the hot tawa for a few minutes per side, until lightly golden. This initial cooking helps set the shape of the koki.
- Gently roll out each par-cooked disc into a thin circle, similar to a chapati but slightly thicker.
- Reduce the heat to low. Cook the rolled-out kokis on the tawa, smearing a little ghee on each side as they cook. The low heat ensures the koki cooks through evenly and becomes crispy.
- Cook until golden brown and cooked through, flipping occasionally.
