Ingredients
For the Spicy Onion Filling
- 1 cup Onion finely chopped
- 1 tsp Nigella Seeds also known as kalaunji
- 1 tsp Fennel Seeds also known as saunf or sauf
- 1 tsp Chili finely chopped, green
- 1 tsp Chili Powder red
- 1/2 tsp Coriander Powder also known as dhania
- 1/4 tsp Garam Masala
- 1 tbsp Gram Flour also known as besan or gram flour
- 1 1/2 tsp Salt or to taste
- 1/4 cup Coriander finely chopped
- 2 tbsp Vegetable Oil for cooking the filling
For the Dough
- 1 cup All-Purpose Flour also known as maida
- 2 tbsp Clarified Butter clarified butter
- 1 1/2 tsp Salt or to taste
- 1/2 cup Water approximately, as needed for dough consistency
- Vegetable Oil for deep frying
Instructions
Prepare the Filling
- Heat 2 tablespoons of vegetable oil in a pan. Add nigella seeds, fennel seeds, and green chilies. Sauté for 30 seconds until fragrant.
- Add the chopped onions and sauté until translucent, about 5-7 minutes.
- Stir in red chili powder, coriander powder, garam masala, and salt. Cook for another minute.
- Add the chickpea flour and cook, stirring continuously, until lightly browned and fragrant, about 2-3 minutes. Remove from heat and stir in the chopped coriander leaves.
- Let the filling cool completely.
Make the Dough
- In a large bowl, combine all-purpose flour, ghee, and salt.
- Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth.
- Cover the dough and let it rest for at least 10 minutes.
Assemble and Fry the Kachoris
- Divide the dough into 6 equal-sized balls.
- Roll each ball into a thin circle (about 4 inches in diameter).
- Place about 1 tablespoon of the cooled filling in the center of each circle.
- Bring the edges of the dough together, pinching to seal tightly, forming a ball.
- Gently flatten each stuffed ball into a thick, round kachori.
- Heat vegetable oil in a deep pan or wok to medium-high heat.
- Carefully place the kachoris in the hot oil, frying in batches to avoid overcrowding.
- Fry for 5-7 minutes on each side, or until golden brown and crispy. Maintain a medium-low to medium heat to allow even cooking throughout.
- Remove the kachoris from the oil and drain on paper towels.
- Serve hot.
