Ingredients
For the Piaji Batter
- 2 Onion large, thinly sliced
- 1 cup Gram Flour besan
- 1/2 tsp Baking Soda
- 1 tsp Chili Powder adjust to taste, red
- 1 tbsp Cumin ground, jeera
- 1.5 tsp Salt or to taste
- 1/4 - 1/2 cup Water as needed for desired consistency
For Frying
- 2 cup Mustard Oil or vegetable oil
Instructions
Prepare the Batter
- Thinly slice the onions. In a large mixing bowl, combine the sliced onions, gram flour, baking soda, red chili powder, and ground cumin seeds. Add salt to taste. Gradually add water, mixing until you achieve a thick, but not runny, batter. The batter should be spoonable.
Fry the Piaji
- Heat the mustard oil in a large, heavy-bottomed pan or kadhai over medium heat. Once the oil is hot (a small piece of batter should sizzle immediately), carefully drop spoonfuls of the batter into the oil, maintaining some space between each fritter.
Cook and Serve
- Fry the Piaji at a low to medium flame, turning occasionally, until they are golden brown and crispy on all sides. This will take approximately 3-4 minutes per side. Remove the Piaji from the oil and drain on paper towels. Serve hot with your favorite dipping sauce. Enjoy!
