Ingredients
Dry Ingredients
- 1 cup Gram Flour besan
- 1 tbsp Rice Flour
- 1/2 tsp Chili Powder
- 1/4 tsp Baking Soda
- 1 pinch Asafoetida hing
- 1.5 tsp Salt or to taste
Wet Ingredients
- 1/2 cup Water as needed, or more
Produce
- 2 medium Onion thinly sliced lengthwise
- 2 Curry Leaves fresh
Frying
- Vegetable Oil for deep frying
Instructions
Prepare the Batter
- In a mixing bowl, whisk together the gram flour, rice flour, chili powder, baking soda, asafoetida, and salt until well combined.
Add Onions and Curry Leaves
- Add the thinly sliced onions and curry leaves to the dry ingredients. Gently mix with your fingers until the onions are evenly distributed throughout the batter.
Incorporate Water
- Gradually add water, a little at a time, mixing with your fingers until you achieve a thick, but not runny, batter. The consistency should be similar to thick pancake batter.
Heat the Oil
- Heat the vegetable oil in a deep pan or kadai over medium heat. The oil should be hot enough to sizzle a small drop of batter immediately.
Fry the Fritters
- Gently drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown, turning occasionally to ensure even cooking.
Drain and Serve
- Once golden brown and crispy, remove the onion fritters from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve hot and enjoy!
Recipe Notes
Expert Tips for Perfect Vengaya Vadai
- For extra crispy fritters, let the batter rest for 10-15 minutes after mixing. This allows the flour to absorb the liquid and helps create a crispier texture.
- Don't overcrowd the pan when frying. This will lower the oil temperature and result in soggy fritters. Fry in batches to maintain the oil temperature.
- Adjust the amount of chili powder to your preference. If you prefer a milder fritter, reduce the amount of chili powder, or omit it altogether.
- Serve immediately for the best taste and texture. These are best enjoyed fresh and hot, but can be stored in an airtight container for a day or two.
